I’m Nicole —a culinary-trained recipe developer, former personal chef, author of my new book; The Island Spirit and proud team member of the Kōloa Rum Company on the breathtaking island of Kaua‘i.

Soft on the inside, crispy on the outside and enhanced with deep mocha flavor. That one impulse led to a deeper journey, revealing just how much richness and creativity rum can bring to everyday cooking.
Working in the Kōloa Rum Tasting Room has only deepened that passion. As I share ideas with visitors—not just about crafting delicious cocktails but also how rum enhances food—I see the excitement build. Most people have never thought to cook with rum… but once they taste the possibility, they light up!
So I am here to say: YES, you can cook with rum—and it’s going to surprise and delight you!
