I’m Nicole — recipe creator and author of The Island Spirit: The Ultimate Guide to Rum-Infused Cocktails and Cuisine.
The Island Spirit Kitchen is where I share island-inspired recipes and cocktails, seasonal ingredients, entertaining ideas, and the little bits of culinary “why” that help home cooks feel more confident in the kitchen.
Long before this newsletter, I was raising three kids, cooking for my family, and finding joy in gathering people around the table. That love of food and entertaining eventually inspired me to attend culinary school and later work as a personal chef. Those experiences still shape the way I create recipes today: approachable, flavor-focused, and made to be shared.
Living on Kauaʻi continues to shape the way I cook and see food. I love the laid-back lifestyle, the abundance of fruit growing all around us, and the beautiful mix of food cultures here — Hawaiian, Filipino, Chinese, Japanese, American, and so many more.
From mango season and farmers market finds to food trucks, restaurants, and local businesses, there is always something inspiring to learn, taste, and bring back into the kitchen.
Through my work with Kōloa Rum Company, I began experimenting with rum as a culinary ingredient and discovering how it can add warmth, aroma, depth, and balance when used thoughtfully in a recipe.
Rum remains part of my story, and I’ll continue sharing creative ways to use it in cooking and cocktails when it truly adds something special. But it is not the whole story.
At its heart, The Island Spirit Kitchen is about sharing the flavors, ingredients, and creative food culture that inspire me here in Hawaiʻi — then turning that inspiration into approachable recipes and ideas you can bring into your own kitchen.
