I know what you might be thinking. Rum in breakfast? It doesn’t seem quite right at first. But the rum isn’t there to make the waffles taste boozy. It’s there to add subtle flavor and aroma.
As the waffles cook, much of the alcohol evaporates, leaving behind gentle notes of coconut, spice, caramel, or vanilla, depending on the rum you choose. Those flavors pair beautifully with the golden, buttery waffles without taking over.
Rum can also contribute to a lighter texture. Alcohol interferes slightly with gluten development, which can help keep waffles tender rather than tough. And when the batter hits the hot waffle iron, steam helps create that airy interior and crisp golden exterior we all love.
It feels a little like kitchen magic, but really it’s just another way a small ingredient can bring out the best in a familiar recipe.

Ingredients
Dry Ingredients:
2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp salt
Wet Ingredients:
1 3/4 cups milk (room temperature)
2 large eggs
1/4 cup melted butter (cooled slightly)
2 tbs Kōloa Rum of choice (Coconut, Spice, or Dark)
1 tsp pure vanilla extract
Instructions
1. Preheat Your Waffle Iron:
Turn on your waffle maker and let it fully preheat according to the manufacturer’s instructions. Lightly grease with oil or butter if not nonstick.
Tip: A hot iron gives you crisp edges and an even cook. Don’t rush it.
2. Mix the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Combine the Wet Ingredients:
In another bowl, beat the eggs lightly, then whisk in milk, melted butter, Kōloa Rum, and vanilla extract until fully combined.
4. Combine Wet & Dry:
Pour wet ingredients into the dry ingredients. Stir gently until just combined. It’s okay if it’s a little lumpy, overmixing leads to tough waffles. Let it rest 5–10 minutes before cooking.
5. Optional for Extra Fluffiness – Whipped Egg Whites:
Separate the eggs before mixing. Add yolks to the wet ingredients. In a separate bowl, whip the egg whites to soft peaks, then gently fold them into the final batter. This step adds air for waffles that are extra light.
Tip: Fold gently-use a rubber spatula to lift from underneath without deflating the air.
6. Cook the Waffles:
Scoop 1/2 to 3/4 cup batter into your preheated waffle iron (depending on model). Close and cook for 3–5 minutes or until golden and crisp.
Avoid opening the waffle iron too early! Wait until steam subsides for the crispiest result.
7. Serve & Garnish:
Top with fruit, whipped cream, or maple syrup. For extra flair, make a quick Kōloa Rum syrup by warming a mix of maple syrup and a splash of rum.
Easy Substitutions
Non-Alcoholic Option
If you’d rather skip the rum, replace it with an equal amount of whole milk, coconut milk, or even apple juice. You’ll lose the subtle rum flavor, but your waffles will still be light, fluffy, and golden.Dairy-Free
